Kebab rice noodles (Bun cha)
This dish is made from pork and originates from Hanoi. The dish combines three elements: a cup of grilled meatballs in cold broth, a plate of fresh rice vermicelli and a combination of green vegetables such as perilla, lettuce, coriander and water spinach.
Although bun cha or similar varieties appear in other regions of Vietnam, Hanoi’s local version is the most appreciated. Not much is known about the history or origin of this dish, but it was internationally recognized in 2016 on super chef Anthony Bourdain’s culinary program when he enjoyed bun cha with former US President Barack Obama.
Hue beef noodle soup (Bun Bo Hue)
The famous Vietnamese water dish is traditionally eaten for breakfast, including broth from pork and beef bones, fresh vermicelli noodles, lemongrass, fish sauce and many herbs. The Hue beef noodle soup is much spicier than most Vietnamese dishes and the flavor is often described as rich and complex.
Hue beef noodle soup originates from Hue, but not much is known about its exact origin or inventor. Common additions include sliced beef, pork or crab balls, but each chef prepares the dish with slight variations. Many people believe that Hue beef noodle soup is influenced by royal cuisine.
Vietnamese Pancake (Banh xeo)
A famous Vietnamese dish, similar to Western crepes, but crispy with a variety of salty ingredients. The signature Vietnamese element in these nutritious pancakes is rice flour, which is combined with water, turmeric powder and coconut milk to create a thick yellow dough.
Additional ingredients, most commonly green onions, bean sprouts, shrimp, and pork or beef, are stir-fried before adding the mixture to the pan. Banh xeo or Vietnamese pancake is pan-fried at low temperature and gently folded in half, keeping the ingredients inside the cake.
Sweet soup (Che)
Vietnamese sweet soup is very diverse, including sweet dishes cooked into liquid or thick, served both hot and cold. Ingredients to make sweet soup include a variety of jellies and fruits, beans, rice, sticky rice and even tubers and grains.
It is believed that sweet soup originated in Central Vietnam, but today it is widely available throughout the country and is prepared in countless variations. Because they are high in fat like beans and sticky rice, they are a popular snack often sold in plastic cups in Vietnamese stores, while one of the most popular types of sweet soup prepared at home is white bean sweet soup.
Beef Stew (Bò Kho)
A popular Vietnamese beef stew, it can be eaten alone or with bread and many herbs. The dish includes ingredients such as beef cut into large cubes, carrots, lemongrass, cinnamon, chili, pepper, garlic, purple onions, all simmered in a spicy, fragrant broth.
In rural areas of Vietnam, braised beef is often much spicier than in urban areas.
Spring roll
The South calls it spring rolls, the North calls it fried spring rolls, but either way, they all have the main characteristics of being filled with pork and shrimp, rolled in a thin layer of rice paper.
Spring rolls are fried and produce a dish with an eye-catching golden color, a thin, crispy outer layer and a rich filling.
Meat bread
Made from a variety of cold meats such as grilled pork, sliced pork belly, patties, or pork sausage, along with cucumbers, mayonnaise, pickled carrots, and white radishes, liver pate is sandwiched in a loaf of bread.
Meatloaf is popular throughout Vietnam and is often enjoyed for breakfast but it is not mandatory, you can eat it at any meal of the day. Vietnamese bread today has gone beyond the country’s borders and is present in many places around the world.
Vietnamese Pho
It is the national dish, the most popular dish in the country. This is also one of the most popular Vietnamese dishes in the other countries from a-z because of its complex, unique flavor and elegant simplicity. Although it is classified as a soup, pho is served as the main dish and the taste of two bowls of pho is never the same.
Traditionally, pho is cooked with chicken or beef broth, in which the bones are simmered for at least three hours until the broth is perfect. The addition of herbs and spices accentuates the flavors, and the chewy pho noodles, succulent beef slices, and herbs elevate the dish up a notch.
